Grandma's Chicken and Dumplings

Chicken and Dumplings

Chicken Stew
Ingredients:
1 whole chicken, in pieces*
1 onion, finely chopped
2 large carrots, finely chopped
1 quart chicken broth or enough to cover chicken in stock pot

Directions:
Simmer chicken pieces in stock pot with carrots, onion and chicken broth, until chicken is fully cooked.

*May use either bone in or boneless chicken pieces.

Dumplings
Ingredients:
1 ½ cup Flour
1 Tbs Parsley Flakes**
2 tsp Baking Powder
½ tsp Salt
3 Tbs Shortening (Crisco)
¾ cup Milk

Directions:
In medium bowl, mix flour, parsley, baking powder and salt. Cut in shortening with pastry blender until mix looks like fine crumbs. Add milk, stir. Drop dough by spoonfuls, about 10, into hot chicken stew and liquid. Cook uncovered 10 minutes, cover and cook 10 minutes longer.

**May use 2 tsp chopped fresh herbs or 1 tsp dried herbs (dill, basil, thyme, or celery seeds are good substitutes for parsley)
